颗粒冷水可溶性甘薯淀粉最佳制备条件研究

    Research on Preparation Condition of Granular Cold-water-soluble Sweet Potato Starch

    • 摘要: 为了确定颗粒冷水可溶性甘薯淀粉的最佳制备条件,采用酒精碱法制备甘薯淀粉,分析了反应温度、反应时间、氢氧化钠溶液用量、水与淀粉(干基)的比例、无水乙醇与淀粉(干基)的比例五个因素对产品冷水溶解度的影响,得出制备颗粒冷水可溶甘薯淀粉的最佳工艺条件。即反应温度为33.9 ℃、反应时间为22 min、氢氧化钠溶液用量为18.1g、水与淀粉(干基)的比例为3.6∶1、无水乙醇与淀粉(干基)的比例为3.8∶1。在此条件下制备的甘薯淀粉冷水溶解度为89.07%。

       

      Abstract: In order to determine the best preparation conditions of granular cold-water soluble sweet potato starch, the alcohol alkali method was used to prepare the sweet potato starch. The effects of reaction temperature, reaction time, amount of sodium hydroxide solution, proportion of water to starch (dry basis)and proportion of anhydrous ethanol to starch (dry basis) on the solubility of cold water were analyzed. The best preparation conditions for granule cold-water soluble sweet potato starch were as follows: reaction temperature is 33.9℃, reaction time is 22 min, sodium hydroxide solution dosage is 18.1g, ratio of water to starch (dry basis) is 3.6∶1, ratio of anhydrous ethanol to starch (dry basis) is 3.8∶1. The cold water solubility of sweet potato starch prepared under this condition is 89.07%.
